Potato Jacket with Ground Turkey

Happy Friday everyone :D.

I made it through my first week back…well actually, I almost made it. I have one more class this afternoon from 1:30-4:30…blech. Then I’ll be done for the weekend!

My class is having a bbq this evening so that us second years can meet the first years in the program! And then my friends and I will probably go out afterward.

Also, I’m sorry I haven’t really been able to supply too many CJ pics thus far. You see, he’s still very scared and timid and pretty much hides underneath my bed all day. He’s making progress though…it’s just very slow. Baby steps.

Here is one from last night when he finally didn’t jump off the bed after I held him. Instead he fell asleep!

Yesterday I also made a really tasty dinner that was super easy!

Potato Jacket with Ground Turkey

Serves 2


  • 1 medium sized russet potato
  • 1/2 lb lean ground turkey
  • 2 Tbsp light sour cream
  • 2 Tbsp salsa of choice
  • 2 “shakes” of Italian seasoning (or to taste)


  • Brown ground turkey in a skillet over medium-high heat until cooked all the way through (no long pink).
  • Cook the potato in the microwave- clean potato; puncture several holes in it; cover with saran wrap (to keep in moisture) and cook in microwave on high for 7-8 minutes. Let it cool for several minutes before taking out.

  • Slice potato down the middle. Scoop out the center of both halves, leaving some around the edges so that for sturdiness.

  • Mash together the ground turkey, scooped-out potato, sour cream, salsa and Italian seasoning.

  • Stuff the mashed up mixture back into the potato. Heat up for about 20 seconds if you want it to be really hot. ***Please note- not all of the mixture was able to fit inside the potato jacket so I just ate it alone. Less turkey can be used, but I would not have been full so I didn’t do that haha.***

I served my potato jacked with steamed broccoli and cauliflower…it was a mighty fine dinner!

I’ve never stuffed potatoes with anything… usually I just bake em and plop my toppings on lol. But I’m definitely going to have to think up some kind of stuffing because it looks delicious.

  14. I don’t usually stuff potatoes, but that does look really good! A potato topped with salsa is good, but I think that’s the closest I’ve gotten to filling it up!
