Pumpkin Goodness

Hi friends!

First of all, happy 24th birthday do to my wonderful boyfriend Chris!!!! I love you!! πŸ˜€

I realize that it’s not technically fall yet, but it definitely feels like it here in Boston. And for that reason- and because Starbucks reacquainted us with the pumpkin spice latte- I’ve been having an intense desire to consume pumpkin flavored things. Pumpkin goodies are some of my favorite things about fall! And then I see so many lovely bloggers posting pumpkin recipes and my desire increased even more! At some point during this season I want to recreate Tina’s pumpkin carrot cake bread, Julie’s pumpkin oatmeal muffins, and Katie’s pumpkin spice latte for one!

Sadly, when I went to the grocery store last week, they only had canned pumpkin pie mix…booooo.

But, no worries, when I finally decided to give into my craving yesterday, Whole Foods came to the rescue and they had regular canned pumpkin :D.

Last night, I was in the mood for a new dinner recipe and wanted to try pumpkin in a savory dish- I never had before! In came Courtney’s Pumpkin Black Bean Soup recipe. Oh my god you guys, you seriously have to make this! It was freaking amazing! Thank goodness I have a ton of leftovers because I just want to keep eating it haha.

I followed Courtney’s recipe exactly…the only different thing I did was add two chicken breasts! Seriously, make this soup! It tastes fabulous and as an added bonus your house will smell amazing :).

This morning, I still had pumpkin on the brain…apparently I needed to indulge the sweeter side of the craving. So I decided to try pumpkin in a smoothie. This was a success!

Chocolate and Vanilla Pumpkin Protein Smoothie

Ingredients

  • 1 frozen banana
  • 1/2 cup canned pumpkin
  • 1 cup unsweetened vanilla almond milk
  • 1 scoop chocolate protein powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • Ice

Directions

  • Add all ingredients to a blender and blend until smooth.
  • Pour into a glass and enjoy :).

I think I now have a new favorite breakfast. Oatmeal may have to take a seat on the sidelines for a few days until this can of pumpkin is finished.

  1. Pumpkin muffins are by far my favorite thing to make. I was SO bummed because the grocery store was all out this weekend when I went to stock up!! I’m DYING for some. Everything about Fall is pretty much my favorite thing: apple picking, cooler weather, perfect temps for running, pumpkin, sweaters, etc!

  3. I bet I’d love that. I made a pumpkin pork chili one time that was really amazing. I found it on the foot network site, though it sounded odd, but am so happy I went for it.

    I saw Courtney’s recipe last week and put it on my “to make” list right away, too! Glad to know it turned out so great! I love pumpkin muffins and I love to do overnight oats with a scoop of pumpkin and some pumpkin pie spice mixed in. Then I dip apples in it. So delish!

    I love pumpkin. I think my favorite recipe with pumpkin would be my mother-in-laws pumpkin praline pie. It’s heaven!

  12. Pumpkin and apples are my favorite fall foods. I had a chocolate pumpkin smoothie this morning too. I added some spinach and expresso powder to the mix for some extra vitamins and caffiene.

  14. I’ve been wanting to try pumpkin using my chocolate Shakeology but wasn’t sure how it’d taste. If you used chocolate protein powder and it turned out great, I’m going to have to try this! Thanks for the idea!

  25. I think my pumpkin obsession is evident. I still have 5 cans leftover from last year’s hoarding, but think buying another case is in order soon! Only 69 cents per can at Aldi (not organic though). My favorite fall thing is FOOTBALL SEASON!

  29. I still haven’t given into my pumpkin craving yet- I’m holding off! I saw pumpkin donuts in the faculty room at school today and almost died, but I stayed with my yogurt. I wanna get some Libby’s and bake a bread to give in πŸ™‚

  30. One of the good things about fall- being able to enjoy pumpkin again! …I’m loving the pumpkin pie protein smoothies in the mornings!! I have oatmeal in the fridge that I just can’t make myself eat in the mornings, I want the pumpkin protein! πŸ™‚
