Dinner, Gymboss, and Nike

Happy Friday!!

I think it’s amazing that so many of you are like me and still sleep with your baby blanket or a stuffed animal! We’re just all kids at heart right? ๐Ÿ˜‰

So, this week I’ve been doing pretty good with the back-to-school goals that I’ve set for myself! I’ve already completed ab work 3 times this week…and that’s about 1 more time than I usually do. Also, last night I tried a super delicious recipe!

I made Chicken with Quinoa and Veggies. I found the recipe on allrecipes.com!

I followed the recipe pretty much exactly. The only things I changed were using low-sodium chicken broth instead of regular, using 1 garlic clove that I minced instead of 2 chopped garlic scrapes, and using 2 TBSP of olive oil instead of 4!

This dish was super tasty and very filling! Plus, it made enough for 4 big servings…which is fabulous because now I have leftovers :).

The feta cheese and basil added a really nice flavor boost that also wasn’t too overwhelming. I’m really glad this turned out so well! If you want to see the full recipe just click on the link that I provided above! I highly suggest you try it out.

So I forgot to mention that I got two fitness related items over break that I am in LOVE with! I bought myself a Gymboss Interval Timer and for Christmas I received a pair of Nike Free shoes :).

I hadn’t mentioned my Gymboss timer when I got it because I bought one for Chris as a Christmas present and I didn’t want him to know about it haha. Anyway, I am seriously hooked on using this little gem. It is absolutely perfect for tabata workouts or any workout that you want to time the intervals and rest periods. The timer is small and just clips onto your pants. You can set it to either beep or vibrate at the end of the interval (the vibrate is good for when you don’t want to annoy someone else!).

The other really neat thing is that you can set the timer to repeat a certain number of times. Again this is really helpful. I remember the first time I tried to do a tabata workout and I just used a stopwatch…that didn’t work so well. Not only was I constantly looking at the time, but I probably rested for longer than 10 seconds (without meaning to). I definitely feel like I work harder when using this timer because I know that I need to push myself until I hear that beep or feel the vibrate!

Finally, another great thing about the Gymboss timer is the price…it’s only $19.95! Talk about a great deal for something that is an awesome fitness tool! So yea, in case you can’t tell, I highly recommend investing in one of these if you like to do tabata and interval workouts that require a timer of some sort!

And I got a sweet pair ofย  Nike Free shoes. They are awesome. And I love the bright color :).

They are SO light and very comfortable. I haven’t worn them for running and I don’t plan to because I tend to need a lot of cushion and support when I run. That being said, I absolutely love wearing these for cross training, lifting weights, and tabata workouts. And I also think they are so fun that I will probably just wear them with some of my cuter “sporty” looking clothes :D. Hey, who says that fashion and fitness can’t mix?

Anyway, enough rambling for me. I have my first class of the semester this morning from 8:30-11:30am. Let’s hope those 3 hours go by quickly!

  2. Ahhhh I LOVE those Nike Frees! I have already raved about them a few times on my blog, but I love the colors you chose! So darn adorable… and white always makes your legs look tanner ๐Ÿ™‚

    I need to get a timer like this… I do the body rock workouts sometimes and find myself looking at my watch to know when to switch. Kind of distracting!

    I am saving this dinner recipe! I always have a sweet potato with plain greek yogurt and nut butter (which I am obsessed with) but I should switch it up once in a while!

  4. I find it hilarious that you made a quinoa recipe when you said yesterday that you could take it or leave it–that’s totally something I would do! Glad you liked that recipe, though! ๐Ÿ™‚

    I love the idea of that timer–nice price, too!

    And you know my go-to dinner is a panini! They’re just so versatile! I’m thinking fresh mozzarella with strawberry jam and thyme tonight! YUM!!

    • Hahaha yes! I’m glad that someone actually called me out on it…I was wondering if anyone would ;). I really need to make a panini. I can’t believe I never have! Maybe that will be the recipe I try next week!

    Love your shoes!! The last Nike’s I had were Shox, but my ankles are terrible and would turn in them all the time. I haven’t bought Nike’s since, but those are so cute!! Maybe I need to check that brand out again?! My go to dinner is whole wheat pasta, marinara and ground turkey sauce, with bagged salad on the side. Easy peasy and fast!

    your new nike frees are so cute – love them! i have a pair as well that i like to use for workouts other than running. like you said, i need more cushion when i run so i wear my asics for running.

  10. Love my gymboss. I use it for tabata workouts as well. I hook it onto my sports bra and sometimes cheat and look how much time I have left! I really want yellow Nike frees! Online shopping here I come!

  12. My go-to dinner is always chicken stir fryโ€ฆwhen I have no imagination, I’ll open a frozen bag of stir fry veggies and throw in some soy sauce and BINGO! Dinner

  14. I still sleep with my baby blanket. I know I am late to the party but I had to chime in ๐Ÿ˜‰ I have a gymboss and I found it was great for running intervals outdoors when I was doing timed HIIT!

    • Yay for baby blankets…I hope mine lasts for a very long time! That is a really good idea to use the gymboss for outdoor intervals! When (or if) this weather gets warmer I will be trying that!

  19. Wow that dinner looks amazing! I love quinoa, it’s so filling! Gotta love when a recipe makes enough for leftovers, I love the not having to cook as much! ๐Ÿ™‚

    I have heard of those gymboss timers, I really want one! It’d be so handy and convenient with tabata workouts, I hate when I think I’m up on time, nope 3 seconds left, and then you just wasted time.. ha ha

    • Haha yea that was how I was the first time I tried a tabata workout and didn’t have it…I just kept looking at the time, so no wonder the workout didn’t feel as challenging!

  20. Yum, your dinner looks awesome! My “go-to” dinner is typically some type of chicken and pasta. I have that “go-to” chicken recipe on my blog (which is basically just chicken dipped in Italian breadcrumbs and cooked in a little olive oil). I will make that with some whole-wheat pasta, tomato sauce, and maybe throw in some cooked broccoli for a great, quick meal! ๐Ÿ™‚

  21. That timer looks cool! I was just doing some intervals this morning and thinking its kind f hard to keep track of time.

    My go to easy dinner is always spaghetti with lots of vegies and cheese.

  22. My easy go-to dinner is usually sweet potatoes and chicken or savory oats and ground turkey. I usually have some sort of meat and sweet potatoes already cooked in the fridge so those are my favs to throw together.

    My go-to recipes are things that can be thrown together very easily. I love to cook up some frozen pasta or ravioli and mix in veggies and pasta sauce. Simple, yet comforting and delicious! And anything in a crock pot is always a go-to as well.
